3.1.1 The physiological maturity of the fruit at harvest is critical, as it greatly influences the storability and eating quality of the fruit.

3.1.2 Monitor fruit maturity regularly throughout the season and at specific times of the day.
- Use the correct pressure tester and procedure (tip diameter, depth of cut, temperature, etc.).

3.1.3 Avoid picking wet fruit (dew, rain, irrigation)
- Do not harvest fruit with high turgor pressure after rain or irrigation, as it is prone to injury and may develop rub marks.
- If rainfall exceeds 10 hours, resume harvesting only the following day.
3.1.4 Harvest fruit during the cooler hours of the day.
- Preferably in the early morning when temperatures are below 25°C.
- Remove field heat as soon as possible after harvest.
3.1.5 Employ well-trained pickers.
- Ensure correct harvesting methods, aids, and equipment are used.
